Yummy Peanut Butter Chocolate Chip Flax Cookies

With two little ones around, it's tough to find time to bake, but there is nothing like a homemade cookie!  I found the base of this recipe online and made some healthy modifications (whole wheat flour/organic cane sugar).  I love this recipe because it is quick, easy and delicious!  Enjoy!

Ingredients


    1 cup whole wheat flour
    1/4 cup ground
    flax seed
    1/2 tsp salt
    3/4 cup real butter
    1/2 cup organic cane sugar
    1/2 cup brown sugar
    1/2 cup (crunchy or creamy) peanut butter
    1 egg
    1 tsp vanilla extract
    1 cup semi-sweet chocolate chips

Directions

Combine dry ingredients in a small bowl. Beat butter, sugars, and peanut butter until creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in chocolate chips. Drop tablespoons of dough onto ungreased cookie sheets. Press down slightly to flatten into 1 1/2" circles.

Bake in a preheated oven at 375 F for about 8-10 minutes. Let cookies stand for a couple of minutes once removed from the oven, then transfer to wire racks to cool completely.
