A few days ago, I decided I needed to make something that was easy to grab and eat or create a breakfast from in the morning. Eggs are a pretty big staple in our house as they are one of the main foods in Savy Baby's FPIES based diet.  Personally, I love an egg sandwich, burrito, etc. in the morning, but I rarely seem to have the time to cook up a fresh egg before work. That leaves me either eating something that is less healthy like a bagel with cream cheese or buying a few $.99 wraps from Dunkin' Donuts (these are my big breakfast weakness to be honest). Since I already had ham, cheese and mini flour tortillas on hand, I figured it all I needed to do was make some eggs.

If you know me, you know that I love ice cream. I mean, I'm not one of those people that have to eat it only during warm months. If I did, that means I would miss out on it approximately half the year! I mean, imagine 6 months without this delectable treat?!
The only thing I don't like about ice cream is that it's nearly impossible to find a brand in our local store that doesn't contain a ton of chemicals. I mean, it's just like cream, sugar, and maybe cocoa (for chocolate), right?

Today, I was just reminiscing about my life five years ago. We had only been married for about 15 months and had a nearly two month old son. Over the past year I have become pretty addicted to watching a few video bloggers (known as "vloggers"). As I watch them share their personal lives with the world in a creative way, I wonder if that's something I could do.  Personally, my biggest barrier is that I don't care to appear on camera. In fact, most of the pictures taken of my family in the last five years have not included me. Of course, like most moms, this is actually pretty normal.  But, for YouTube moms, they document their lives, share them with the world and regularly (often dialy+) appear in videos. They appear pretty normal, not flustered or nervous and natural. Those are the ones who are successful.

Valentine's Day is right around the corner and this year we are on a pretty tight budget.  One of my favorite places to browse and shop for a holiday when on a budget is my local dollar store. Luckily I have two very reliable ones within a few minutes of my house. They have a pretty good assortment of stuff to choose from. Since my oldest goes to preschool, I have to get something to give his classmates (25 kids) that's not candy (restricted by the school thankfully).

As I have explained on the blog, our youngest, Savy Baby has a rare food allergy diagnosis called FPIES. She cannot have anything with dairy, soy, wheat, rye, bananas, sweet potatoes, rice, oats, corn or avocado. One of the things that is a staple in her diet is Quinoa, so I decided to try to modify a pancake recipe to include Quinoa flour as the base and use ingredients that we have trialed and deemed safe for her to eat. They looked and felt just like traditional pancakes. This was the very first time she ever was able to have a pancake and she absolutely loved them!

Ingredients:
1/4 + 1/8 Cup Quinoa Flour
1/4 Cup Applesauce
2 Eggs
1 Tablespoon Almond Milk
1/4 Cup Pureed Pumpkin (I used organic canned pumpkin)
1/8 Teaspoon Baking Powder
Olive Oil or Coconut Oil

Directions:
Mix all ingredients together. Grease skillet or pan with olive oil or coconut oil and heat. Poor batter onto heated skillet/pan. Let cook for a few minutes on each side.
This recipe makes around 6 medium sized pancakes.

These pancakes do have a Quinoa flavor. You could add some sweetener (i.e. sugar, agave), chocolate chips (Enjoy Life are free of dairy, soy, nuts and tons of other allergens) or fruit into the batter if you prefer, or maybe even some maple syrup on top!

Today, I made our bed for the first time this year. I know it's only January 9th, but that's a pretty big deal.  Considering I think I only made our bed a total of a handful of times in 2014. Savy Toddler just turned three and we have never cut her hair. It is currently down to her lower back. At the moment, we aren't ready to cut it, but we have started the process of talking to her about donating her hair to children who are currently unable to grow their own. In doing so, I know of the organization Locks of Love, but I want to know more about other organizations it could go to. Nothing against Locks of Love as I think that there mission is very worth of donations, but I like to give to something that is less mainstream and where my donation may make a greater impact.

Tonight at the dinner table, we somehow got onto the subject of the Tooth Fairy. Our oldest child, Savy Preschooler, just turned five and we have been trying to explain to him the process of baby teeth falling out and adult teeth coming in. First off, Happy New Year! Welcome to 2015! To kick off this year, I'm adding a new series to the blog.  It's called "Daily Random Thoughts" and will feature a topic at random that came to mind that day and a little internet research to answer any questions I have about it.
