Gluten & Dairy Free Pumpkin Quinoa Pancakes #glutenfree #FPIES #foodallergies #recipe #dairyfree


As I have explained on the blog, our youngest, Savy Baby has a rare food allergy diagnosis called FPIES. She cannot have anything with dairy, soy, wheat, rye, bananas, sweet potatoes, rice, oats, corn or avocado. One of the things that is a staple in her diet is Quinoa, so I decided to try to modify a pancake recipe to include Quinoa flour as the base and use ingredients that we have trialed and deemed safe for her to eat. They looked and felt just like traditional pancakes. This was the very first time she ever was able to have a pancake and she absolutely loved them!

Ingredients:
1/4 + 1/8 Cup Quinoa Flour
1/4 Cup Applesauce
2 Eggs
1 Tablespoon Almond Milk
1/4 Cup Pureed Pumpkin (I used organic canned pumpkin)
1/8 Teaspoon Baking Powder
Olive Oil or Coconut Oil

Directions:
Mix all ingredients together. Grease skillet or pan with olive oil or coconut oil and heat. Poor batter onto heated skillet/pan. Let cook for a few minutes on each side.
This recipe makes around 6 medium sized pancakes.

These pancakes do have a Quinoa flavor. You could add some sweetener (i.e. sugar, agave), chocolate chips (Enjoy Life are free of dairy, soy, nuts and tons of other allergens) or fruit into the batter if you prefer, or maybe even some maple syrup on top!
